Celler del Roure

At Celler del Roure, winemaker Pablo Calatayud is dedicated to preserving Valencia’s native grape varietals—including Monastrell, Arcos, Mandó, and Verdil—through certified organic, manually farmed vineyards. Harvested by hand, the grapes come from 15- to 70-year-old vines rooted in diverse clay and limestone soils. Fermentations, often using whole clusters, begin spontaneously in stainless steel or traditional stone lagars before aging in French oak or amphorae. The result is wines that beautifully balance fruit and savory elements, offering a persistent sense of place and authenticity. From their traditional 100% Mandó Les Danses sparkling wine to their fresh and elegant Safrà red, these wines are incredibly unique and tasty additions to any wine lineup.

Domaine de Châteaumar Côtes-du-Rhône Perle de Rosé

Nestled in the heart of Côtes-du-Rhône, the historic estate has been organically farmed for generations by the Souret family, who continue to cultivate their vineyards without pesticides or herbicides. Jean-Felix and Frederic Souret oversee 12 acres in Châteauneuf-du-Pape’s red clay and galets and 25 acres of stony clay-limestone in Côtes-du-Rhône, primarily growing Grenache, Syrah, and Mourvèdre. The naturally tilled soils and meticulous hand-harvesting result in wines of exceptional depth and character. Perle de Rosé, a robust rosé, offers vibrant notes of macerated berries, peach, and earthy spice, balanced by ripe acidity and a soft, rounded palate—an ideal match for grilled lamb, burgers, mezze platters, and of course, a spring wine list.

Honey Bubbles Sparkling Moscato

Light and refreshing, this semi-sweet sparkling wine is an ideal springtime sipper. A lively mousse carries bright flavors of sweet citrus, tangerine, honey, and ripe peaches, while delicate white flowers and a touch of orange zest linger on the finish. Beyond the glass, it supports a greater cause, donating a portion of proceeds to combat Colony Collapse Disorder in honey bees.

Domaine de la Janasse

Renowned as one of Châteauneuf-du-Pape’s top estates, this certified organic, family-run domaine masterfully blends tradition and innovation under the leadership of siblings Christophe and Isabelle Sabon. From approachable, value-driven villages wines to their acclaimed Châteauneuf-du-Pape bottlings, each wine showcases depth and distinction. Their reds, among the region’s finest, range from the elegantly complex Côtes-du-Rhône to the structured intensity of their Châteauneuf-du-Pape selections. The Tradition offers a classic, restrained expression, while Chaupin highlights the purity of Grenache from sandy soils, and Vieilles Vignes offers powerful density, enriched by old-vine Syrah and Mourvèdre.

Le Paradou

Created by brothers Alexandre and Frédéric Chaudière, this project pays tribute to Provence’s historic watermills while capturing the essence of the Southern Rhône. Sourcing grapes from high-altitude, sustainably farmed vineyards in Ventoux and beyond, Le Paradou follows Terra Vitis principles and is on track for organic certification by 2025. Vines, aged 10 to 60 years, thrive in clay-limestone and sandy soils, producing fresh, vibrant wines. Their lineup—Viognier, Cinsault, and Grenache Noir—showcases the rugged beauty of the region. Crafted with a light touch in stainless steel or concrete, these wines evoke the simple pleasure of sipping in the sun in Provence. Lighter reds like these are perfect for cooler evenings and warm days. The Viognier is especially lovely this time of year, reminiscent of newly bloomed spring flowers.
